Mojito Mocktail

I love a refreshing summer drink that won’t sabotage my health goals! Try out this Mojito Mocktail to give yourself a nice refreshing boost!

Mojito Mocktail

Serves 2

 

1 ½ cups strongly brewed mint tea

1 ½ teaspoons honey

1 large lime, scrubbed and dried

20 fresh mint leaves

Fine sea salt

Seltzer

 

  1. Place the hot tea in a small bowl. Stir in the honey until dissolved. Let cool, then refrigerate until cold.

  2. Halve the lime. Cut half into thin slices; reserve 2 for garnish. Divide the remaining slices between 2 sturdy highball glasses; add the mint leaves and a very small pinch of salt. Using a muddler (or the handle end of a wooden spoon), crush and stir the lime slices and mint leaves. Fill both glasses with ice, placing the ice over the mint and lime.

  3. Squeeze the lime half evenly into both glasses. Divide the cold tea between the glasses. Top off with seltzer; stir. Taste and add more honey, if desired. Garnish with the reserved lime slices.

 

NOTES:

  • You can start with bottled mint iced tea, to save time–just be sure it’s unsweetened.

  • If only small limes are available, use 1 for each drink.
